Delicious Gluten Free Four Ingredient Pancakes

These pancakes are a healthier alternative to regular pancakes.

Ingredients
  

  • 2 small bananas or one large
  • 2 sm-med eggs
  • 1 T flour (we use almond)
  • 1 dash Baking powder
  • Toppings

Instructions
 

  • Mash the bananas in a bowl with a fork or potato masher
  • Whisk the eggs in a separate bowl
  • Add the eggs, flour, and baking powder to the bananas and stir
  • Cook in a non-stick skillet or one coated with whatever type of oil you choose.

Notes

Note:  You can use any flour you want, but we use almond flour because of being gluten free.  You can also substitute the flour for protein powder to add a little protein, too. 
I said this recipe is for 2 because these portions are what Deb and I eat. It really makes 2 larger pancakes.  If you like bigger portions when it comes to pancakes, you may want to adjust the ingredient amounts.
