Gluten Free Energy Bars
These energy bars make a delicious sweet treat that is all natural that everyone will enjoy.
Prep Time 10 minutes mins
- 3/4 cup almonds
- 1/4 cup cashews
- 1 1/4 cup pitted dates
- 1/4 cup unsweetened shredded coconut
- 1 tbsp coconut oil
Add almonds and cashews to a food processor or high powered blender and blend until course. Don't blend too much or you will make nut butter.
Add dates to the nut mixture and blend until they are chopped up. And, then add the remaining ingredients until everything is blended. You may need to scrape down the sides and blend again.
Press into an 8x8 pan and place in refrigerator until firm.
