I LOVE chia seeds. We add them to salads and yogurt, smoothies, you name it. I have been eating a lot of eggs for breakfast, but was craving some type of dessert-y breakfast food. So, I decided to make some overnight chia seed pudding and it did not disappoint.
There are so many more benefits of chia seeds but I think you get the point. They are so good for you and so delicious, too.
On to the overnight chia seed pudding recipe.
Like it says, this is an overnight recipe. So, I whipped this up one evening when we were finishing the dinner dishes. And, then put it in the refrigerator over night. I am not kidding, I thought about my pudding overnight in my sleep. 😂
1 3/4 cups of fresh or frozen fruit – I used what was left of our frozen mango and frozen cherries
1 cup – milk of your choice – I used almond milk
1/4 cup – chia seeds
1T – pure maple syrup
3/4 t – vanilla extract
1/2 cup – plain greek yogurt
1/4 cup – granola or nut of your choice for topping – I used slivered almonds
Throw everything except the greek yogurt and the topping in a blender or food processor and blend until mixed. Put into a container or a glass jar overnight. Add the greek yogurt and the topping of your choice.. and devour. You could add a little fresh fruit to the top, too, if you wanted. It is so dang good!
