When I say this is a healthy recipe. I should say it’s healthy-ish-er. When we were in Atlanta last summer for the Haven Conference, we visited a restaurant close to our hotel. I can’t even tell you the name of it, but I will never forget their tater tot nachos. They were DELICIOUS. We TRY to eat healthy whenever we can. And, sometimes change things up a bit to make recipes a little healthier. A big layer of tater tots to me doesn’t feel as healthy as spiralized potatoes in the air fryer. So that’s what we did.
When we got home from Haven, we created this healthy-ish-er tater tot nacho recipe to fit our lifestyle a little better. But, you could totally do the tater tot thing if you want. Just replace the air fried potatoes with those.
Pork Roast
Potatoes
Oil / Salt / Pepper
BBQ Sauce (you favorite)
Cheese
Options: Jalepeno, Green Onion, Sour Cream
We usually throw a pork roast in the crock pot in the morning and cook it all day. It is so delicious and takes minutes to do.
Start by peeling potatoes and running them through the spiralizer. We LOVE our potatoes this way. Two potatoes make a HUGE pile of spirals, so it seems like you are getting a big helping but you really aren’t. Toss them in a little olive oil and whatever you want. We like to use seasoned salt or just salt and pepper.
Cook them in the air fryer for about 10 minutes on 400 degrees. We usually check them at around 8 minutes. And adjust the time accordingly. They will get crispy like hash browns.
Start by layering the crunchy potatoes on a plate and add a little cheddar cheese. You can obviously skip this part if you are counting calories. But we like a little cheese on this bottom layer.
Add a layer of porch roast and drizzle with your favorite barbecue sauce.
You can sprinkle more cheese on top and add whatever you want. In Atlanta, they added jalepenos and sour cream. But, we just added some green onion to this. The crunchiness of the air fried potatoes, the sweet and tangy barbecue sauce and the fresh green onions is SOOOO GOOD together. It’s a go-to comfort food for us which can be made as a healthier meal by limiting the amount of potatoes and cheese you add.
