If you are a lemon fan… OH MY GOSH. You must try this. And if you aren’t, keep reading anyway. I gave a few other options!
First off… This lemon delight dessert contains tofu. When I shared this recipe over on social media stories, I received a few messages saying that if you have thyroid problems, you shouldn’t eat soy. I have heard that and I’ve never worried about it. I, also, think that is a controversial subject. So, if you have thyroid problems maybe check it out.
Secondly… This dessert is SO DANG GOOD. I don’t feel like I have ruined a healthy day of eating when I make this. Tofu is high in protein so when I get to eat a dessert that has high protein, I’m all for it.
Thirdly… We didn’t make up this recipe. I saw it on TikTok and only wrote down the recipe. If you know the original creator, let me know and I will change this post and give credit where credit is due.
I’ve told you before that we live in the boondocks here in Ohio. We live about 20 minutes from town. Deb looked at every grocery store we have around here to find “soft” tofu and it was nowhere to be found. It must be SOFT tofu. So, we grabbed ours on Amazon, so that is always an option if you are having trouble like we were.
Let’s get on to this delicious lemon delight dessert.
12 ounces Soft Tofu – drained well
1/4 Cup freshly squeezed lemon juice
1T lemon zest
1/2 Cup Honey
1T Vanilla
Dash of turmeric and salt
Add all ingredients to your blender. Blend until well mixed – maybe a minute. Refrigerate for a few hours to let it firm up. (We have NEVER done this. LOL) Top with whipped cream and a little lemon zest. This makes about 4 small servings.
I just told Deb this morning that I want to try this using oranges or limes sometime. I think they would be just as delicious if lemons aren’t your thing.
This lemon dessert is quick and easy! When I am in the mood for a simple dessert, this is our go-to. Let me know if you try it.
