I have shared a picture and video of this meal over on social media a few times recently and got some requests for the recipe. If you love brussel sprouts, this one is for you. If you don’t, please don’t write if off yet, because you could substitute them for cauliflower or broccoli. I think what makes it so delicious is the dressing. Yum. We have been adding the brussels sprouts, chicken, and apple salad recipe into our weekly rotation for a few weeks and don’t see it stopping any time soon. Here is the recipe.
As you probably know, we try to eat very healthy. We both feel so much better when we eat whole foods rather than anything processed. This brussels sprouts, chicken, and apple salad recipe is full of great fiber. The apples make it sweet and the dressing makes it a little tangy. I love those two things in one recipe. It takes awhile to chew, so beware. Ha! We say that most recipes take so much longer to make than to eat and this one is the opposite. We really enjoy it.
When Deb has the grill fired up, she will cook a lot of things at once. So leftover chicken is normally what we use for this. Therefore this recipe takes only a few minutes. Like I said above, you could substitute the brussels sprouts for cauliflower or broccoli. It would be delicious with feta cheese, green onions, or you could substitute walnuts with pumpkin seeds.

Please look up the correct spelling of this vegetable. It is Brussels, named for the city in Europe. Even when referring to a single sprout it it spelled and pronounced with an s on the end!!
