Four Ingredient Peanut Butter Cookie Recipe

We eat pretty darn healthy.  Due to several different dietary restrictions, I am limited on anything sweet that I can eat.  And, sometimes, I just need a sweet treat. I am always on the lookout for recipes for cookies, cakes, muffins, etc, that don’t have a bunch of nasty ingredients, which are also lower in sugar.  And I recently came across this four ingredient peanut butter cookie recipe on Pinterest and I modified it a little for my own needs. And, it is DELICIOUS.  If you love peanut butter, you will definitely want to try it.

My dietary restrictions stink sometimes.  Gahhhhhh….  I can’t have any gluten or wheat as I am extremely sensitive to it. I’ve never been tested to see if I have celiac or it’s only a gluten sensitivity. But when I consume even just a tiny bit of either, my eyes get terribly puffy and my body gets inflamed. AND… my asthma symptoms return.  If I would consume more than a small amount of gluten, my stomach hurts and I get very bloated.  So who knows.  I don’t buy lots of gluten free items from the store because a lot of them contain nasty ingredients.  However, sometimes I just need a cookie, ya know. 

I was in rare form a few days back and kept saying, “I just want a cookie.. or a piece of candy.”

So when I found a peanut butter cookie recipe online with only four ingredients, I immediately made them.  Both of us were thoroughly impressed.  In fact, Deb asked me to make more last night because they were gone as she couldn’t stay out of them.  I did things a little different with my recipe to make the sugar/carb content lower.  The original recipe called for 1/2 cup coconut sugar. I switched that out to monk fruit sweetener because it’s what we use around here. I took the following information about both forms of sweeteners from an article I found online.

Monk fruit sweeteners have zero glycemic index scores, meaning they do not raise blood glucose levels at all. Coconut sugar, while lower in glycemic index score than regular sugar, still has a score of about 35. This makes it less likely to cause blood sugar spikes compared to regular sugar but still a concern for people with diabetes or those looking to manage their blood sugar levels.

So.. take information and do with it as you wish.  I am only telling you that because you need to adjust the amount of whatever sweetener you add, so it may take an experiment on your part.  Since we use monk fruit sweetener, we had to adjust the amount of the original recipe because it’s a lot sweeter than coconut sugar.  If you use regular sugar, you may have to adjust that too. So this recipe is how we made it with our choice of sweetener.

Four Ingredient Peanut Butter Cookie Recipe

Servings 18 Cookies

Ingredients

  • 1 cup All Natural Peanut Butter
  • 1 large Egg
  • 1/4 cup Monk Fruit Sweetener SEE BELOW NOTE
  • 1/4 cup Almond Flour

Instructions

  • Preheat oven to 350 degrees
  • In a medium bowl, mix together the peanut butter, egg, and sweetener of your choice. Add almond flour 1 tablespoon at a time, mixing between, until the dough is thick and easy to roll into balls. Depending on the type of peanut butter you choose, you may have to use more or less.
  • Roll the dough into 1-inch balls and place on a cookie sheet lined with parchment paper.
  • Using a fork, flatten the cookies.
  • Bake for 12-15 minutes or until the edges are brown. If you like chewy cookies, check after 12 minutes.

NOTE:  I mentioned above that you can use whatever sweetener you choose, so you will have to adjust accordingly.  You could also use maple syrup or honey or a combination of several different sweeteners.

These are really good if you are a peanut butter lover and have different dietary restrictions regarding baked goods. Let me know if you try these four ingredient peanut butter cookies.  I have a feeling these will be a new staple in our home.
