Yes. You read that right. We tried this fake potato recipe and loved them. I recently found out that you can make radishes, as you do potatoes, and they taste pretty similar. How have I not known this before? We share them over on our social media stories, and I’ve had several people ask for the recipe as well. The recipe I am sharing today is pretty spicy. So if you don’t love spicy things, maybe go less on some of the ingredients. Overall, they were delicious and we will definitely be making them again.
3 cups of radishes cut into quarters
2 Tablespoons olive oil
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon oregano
1/2 teaspoon cumin
1/4 teaspoon cayenne
Mix all ingredients together making sure all of the radishes are coated. Place on an oiled baking sheet with foil. Bake for 45 minutes at 350 degrees. Remove from the oven and air fry for 10 minutes at 400 degrees. That last step is to get them crispy. If you don’t want to do that, bake them a little longer. We dipped them in our homemade ranch dip which I shared in a previous post.
They were delicious. Again, a little spicy but the flavor was excellent.
By the way, someone messaged me and said that she always switches out potatoes in soup for radishes and she can’t tell a difference. This not only saves on calories, but I don’t need the starch. Have you tried these? If so, let me know what you think.
