Happy National Peanut Butter Day! You guys probably didn’t even know it was National Peanut Butter Day yesterday, did you? We both LOVE peanut butter so Deb, being Deb, said she wanted to make a dessert. BUT.. she has to limit her dairy. So she searched for some dairy free desserts and found one called Peanut Butter Mousse and it is made with tofu. I was a little skeptical. I love tofu but I’ve never had it in a dessert before. Deb got this recipe off of the Food Network, so we can’t take credit for this one. Just sayin’.
I love to share recipes here on my site because it’s something different. Just in case you didn’t know, you can click the recipe tab up top and find them all listed there. I have shared our favorite shrimp salad, our favorite gluten free home-made pizza, and tater tot nachos. This peanut butter mousse isn’t the healthiest,???? but it is so good for a treat. Everyone has to have a treat day, now and then.
Blend until smooth either in a blender or food processor
1 – 12.3oz package silken tofu
1/3 Cup Creamy Peanut Butter
1/3 Cup Powdered Sugar
Divide among glasses and cover with plastic wrap and refrigerate until set. (Around 30 mins.)
Top with your favorite topping… marshmallow fluff, chopped peanuts, shaved chocolate, peanut butter chocolate chips, white chocolate chips. YUMMY!
This peanut butter mousse was SO DELICIOUS. And, filling. We will FOR SURE be making this again for a simple 5 minute treat.

My husband can’t have diary either due to his GERD(Gastroesophageal reflux disease), I have made homemade almond milk as the store has added ingredients in their Almond milk, so I have to make them homemade. Soak the raw almonds in water for couple of hours then drained the water out, put the almonds in the blender and chop or puree them, add in some water or more to make them creamy look(there will be some chunky look in them but hard to get them more creamy like milk without the pieces still being in them. I googled for this and my husband likes them in his oatmeal like regular milk do but this is dairy free for him. Even made almond butter as well. I even made homemade pizza crust with almond flour and xantham gum which hubby can have. Still make us feel yummy without achy in our tummies. Enjoy the cooking!
