The Whole 30 – The Completion of Week Three

How are you all doing? Hanging in there? I’m not going to lie, the Whole 30, week three, has to go down as one of the most B.O.R.I.N.G. weeks in history. That’s about the only word to describe how both Deb and I feel. Bored. Its like, you know you are half way there, but it still seems like too much to deal with. We’ve said several times during week three, if we have to eat another vegetable, we will pass. Maybe that’s the point. ???? You just get so fed up that you refuse to eat.  Read why we started The Whole 30 in the first place.

The Whole 30 – The Completion of Week Three

Like I said last week on The Whole 30 – The Completion of Week Two post, I miss the ups and downs of my  blood sugar level.  I think I had grown a custom to that feeling and lived off of the energy boost.  I’m also missing sandwiches.  ????  Deb is missing pizza terribly.  ????  Oh…and then there’s wine.  ????  I joked with Deb the other day, “Hey Deb, do you want a nice refreshing glass of water with a healthy side of air for lunch?”  Her face: ????

The “We’d rather you didn’t” berry smoothies have gotten me through some tough times this past week.  I mean seriously.  Plate after plate of vegetables just isn’t that much fun to eat.  We both started craving comfort food horribly.  I came up with a great recipe that is Whole 30 approved and saved my life during week three.   And I thought I would save your lives too by sharing it.

But First…

Have you tried making the whole 30 mayonnaise from the book?  Well, I made some.  If you are a Hellman’s fan, it’s not the same thing.  But, it’s delicious as far as healthy mayonnaise goes.  So that got me thinking.  The Whole 30 allows potatoes and eggs, so why don’t I whip up a batch of potato salad.  So I did.  And, it was delish.  It felt as though I wasn’t following the program but I was.

 

Whole 30 Approved Potato Salad

3 Large Potatoes

2 Boiled Eggs

1 Large Stalk of celery

1/2 of Small Onion

Dill Pickles (to your liking – I like it to be sour so I add extra)

1 Teaspoon of Apple Cider Vinegar

1 Tablespoon of Yellow Mustard

2 Tablespoons of the Whole 30 approved mayo (*Recipe down below)

Salt and Pepper

I boiled the potatoes in their skins half covered with water and covered with a lid.  I think they taste better boiled that way.  But, maybe I’m making that shit up, too.  ????  When they are done, run them under cold water and peel them.  Obviously chop them up into smaller pieces as well as the egg.  Mix everything else together.  I like to leave it in the refrigerator for a few hours to marry the flavors. It tasted delicious as far as a healthy side dish during the boring week three.  It did exactly what I wanted it to do.  It satisfied that “comfort food” craving.

 

Recipe for The Whole 30 Mayonnaise

1 1/4 Cups Light Tasting Olive Oil

1 Large Egg

1/2 Teaspoon Mustard Powder

1/2 Teaspoon Salt

Juice of 1/2 Lemon

*Hint:  The key to this is to have everything at room temperature.  Place 1/4 cup of olive oil, the egg, mustard powder, and salt in a blender or food processor.  Mix thoroughly.  While the food processor is running, slowly drizzle in the remaining 1 cup of olive oil.  After you’ve added all the oil and the mixture has emulsified, add the lemon juice, blending on low to incorporate.

 

A Bright New World

As you can imagine, this mayo opened up a bright new world for us on week three of the Whole 30 program.  It made us think of new things we could eat that were Whole 30 approved to ward off the boredom of it all.  Egg salad was another great substitute for our typical scrambled eggs breakfast.

 

I hope this helps some of you that are in the same boat.  It’s not too late to start for those of you who are thinking about jumping on the Whole 30 bandwagon.   Buy The Whole 30 Guide and jump in.   It’s truly a great guide to get you off of junk food and you aren’t hungry at all.  If you are hungry, you can simply eat…. a vegetable, fruit, or nuts.  I know it sounds boring.  And it gets boring.  But these are a few ways to get your over that hump.

We have eight days left and, without a doubt, I KNOW we can do this.
