Delicious Carrot Recipe

When we were in North Carolina visiting my sister, she wanted to try this carrot recipe.  It has been all over TikTok and Instagram reels.  She made them for us on the first night after we arrived and I haven’t been able to stop thinking about them.  I mentioned them over on our own stories and have been promising the recipe.  And, I am finally taking time to deliver on those promises.

Here is the delicious carrot recipe I have been yapping about.

 

Delicious Carrot Recipe

My sister made this delicious carrot recipe pretty much like the TikTok videos that we have seen.  She cooked her whole carrots half way.  Then she cut them in half, almost all the way through, the long way.  And laid them flat on the cookie sheet to finish cooking.  I, however, did mine a little different simply due to time.  We had been working outside all day long and we were STARVING.  So, I figured if I chopped them in little bite size pieces, they would get done a little faster, which they did.  

Make them however you wish because we all know it doesn’t matter how a carrot is cut.  They will taste the same.

 

Ingredients:

You can use however many carrots you are cooking for.  We made extra so that we would have leftovers.

 

Whole unpeeled carrots – Cut in bite size pieces

Olive oil – Make sure all pieces are coated evenly

Salt and Pepper – to taste

Garlic Powder – to taste

The Gospel All Purpose Rub – LOTS AND LOTS AND LOTS

Butter (Secret ingredient)

 

 

I say lots and lots  because I thought I had a lot of the all purpose vegetable rub on my carrots and I ended up adding more.  

Note:   My sister used a spice mix from Costco that she had on hand.  We had the above on hand, so that is what we used.

I added the carrots to a cookie sheet and baked them at 375 degrees for about 15 minutes and then turned them over.  After taking a sample, I added more of the seasoning mixture and more salt and pepper.  Bake for another 15 minutes or until done.  This is where the secret ingredient comes in.  I added a few tablespoons of butter to the cookie sheet once they were done cooking.  And they were DELICIOUS!  They tasted spicy, savory, and rich due to the butter.

 

I was so dang happy the next day since I made enough for leftovers.  And, they were just as good as the first time around.  I served them with a leftover chicken burger and a salad.  Let me know if you make these and what you think.
