Parmesan Encrusted Carrots

Are you getting ready for the big game this Sunday?  I’ve said it before on social media and on other recipe posts that I don’t even like football.  But, the hype around the Super Bowl is so fun.  Because I know I will be sitting on my couch eating good food.  And, I love the half-time show and the commercials.  That is enough entertainment for me.  This year, we are going to cozy up, make a few cocktails, and make some of the new recipes that we have tried recently, including these parmesan encrusted carrots.  I shared a few other recipes that I linked below.  If you like video form, check them out on Instagram and TikTok both.

Deb mentioned adding something else in this roundup.  And that is the jalapeno popper dip that we shared a few years ago.  Oh my gosh.. I told her that I could eat this alone and we don’t need anything else, but she wants a spread.  Ha!

NOTE: I don’t have specific measurements for the spices on these carrots because we made some of this up. BUT, the more spices the better.  If you think you have added plenty, add a pinch more.  And, if you don’t prefer some of the spices in the olive oil, use only what you love. The real flavors are in the the carrots and parmesan cheese.

Parmesan Encrusted Carrots

If you love cooked carrots, you will love these.
Prep Time 10 minutes
Cook Time 20 minutes
Servings 4

Ingredients

  • Carrots
  • 3 T Olive Oil
  • 2 cloves Garlic
  • Salt and Pepper
  • Onion Powder
  • Italian Seasoning
  • Cumin
  • Chili Powder
  • Coriander
  • Red Pepper flakes
  • Parmesan cheese

Instructions

  • Mix olive oil and spices.. the more spices the better. Coat the carrots with mixture. Lay on a bed of parmesan cheese.
  • Bake for 20 minutes in 400º oven. Remove from oven and let them sit for a few minutes to get crispy. I think these would be so delicious with ranch dip.
