Healthy Carrot and Chic Pea Salad

I love finding new-to-me recipes. I especially love healthy recipes.  This is one that I saw on TikTok (follow us) and have had it saved for quite some time.  We were in the midst of our garden pergola project (aka the project that never ends) and I told Deb that I would run in the house and make lunch.  It was slim pickins’ as far as what we had in the fridge.   The meat we had was frozen and the only fresh vegetable we had were carrots.  So I decided to try this carrot and chic pea recipe out, because we had everything else we needed in the pantry.  I didn’t have high hopes when I was making it because I thought it would be very boring.  But, I was pleasantly surprised. Here is how I made this delicious, and very healthy carrot and chic pea salad.

 

Carrot and Chic Pea Salad

If you aren’t into vegan dishes or need a little more substance, I think chicken would be good with this.  We ate it without meat that day and I stayed full throughout the afternoon.  This amount was perfect for Deb and I so adjust accordingly.

 

Ingredients:

2 cups of carrots – I shaved mine but I have also grated them in the food processor the next time that I made this

1 can of chic peas drained and rinsed

Pepitas or pumpkin seeds  – however many your little heart desires 

Hemp hearts – we didn’t have any so we ate it without but they would be delicious on this salad

1 T apple cider vinegar – add more if you like your salads more acidic

salt and pepper to taste

ginger to taste

 

Both Deb and I added the ginger to our own helpings just to make sure we didn’t add too much. And it was delicious.  There is something about the roasted pepitas and the chic peas with the carrots.  YUMMMMMMMM!

Like I said above, you could totally add chicken if you want a “meat” version of this and it would be tasty.  I have made it a couple times since that first recipe.  So that tells you that I think it’s delicious.  Let me know if you try it and what you think.
