High Protein Breakfast Idea

We have been looking for lots of different ways to get more protein in our diets.  I can tell a huge difference when I eat a higher protein breakfast vs a high carb.  Having a high protein breakfast tides me over all the way to a later lunch.  The older I get, the more noticeable it is.  Have you seen the high protein breakfast idea floating all around Instagram and TikTok?  Well, we decided to try it a few weeks ago and cannot believe how delicious it is.  AND.. how filling it is.  I knew I had to share because it is that good.

 

High Protein Breakfast Idea

We eat a lot of eggs for breakfast, a lot of different ways:  boiled, scrambled, over easy.  BUT… by adding a higher protein cottage cheese to them, it not only gives you more protein, but the flavor is excellent!  We have shared it on stories and I always have people ask the ratio of ingredients so I thought I would post it here.  And, if you are on social media, you will have seen that we made our own cheese a few weeks back.  I will be sharing that soon as well.  But our eggs were absolutely delicious this morning and wanted to share.

 

Ingredients:

These measurements are PER PERSON.

 

2 eggs

1/4 cup cottage cheese – We use Prairie Farms because it had the highest protein in the choices we had at the store.

1/8 cup fresh salsa

Veggies:  mushrooms, peppers, green onions, spinach – We use whatever we have on hand or whatever we need to use up before going bad.

1/8 cup shredded cheddar or feta

1 corn tortilla

 

Mix the eggs, cottage cheese, fresh salsa, and any veggies you want.  It’s good without them, too.  If you don’t mix it all before you add it to the pan, the cottage cheese will stay in a lump.

Add the egg mixture to the skillet and cook it on one side.   Add the corn tortilla to the top once the eggs are half way cooked.  Flip it over on the corn tortilla side to cook the eggs the rest of the way through.  This is when you will add the cheese of your choice and let it melt.  

It is so delicious and has something like 29grams of protein.

 

Let me know if you try this or make it differently.  The corn tortilla gives it a totally different taste and also gives it a little crunch.
