We decided to celebrate National Pizza Day, of course, by making a homemade pizza. Our meals have to be very creative these days. I already told you several times that I cannot eat gluten. After not eating it for a year, my asthma and allergies have calmed way down. If I even have a little bit, the inflammation settles under my eyes. If I have A LOT, I am using my inhaler for three days until it leaves my system. So I have to remain gluten free.
Deb is having dairy issues. She had acid reflux so bad for over 6 months. She was taking over the counter meds to try to control it without any luck. She stayed clear of spicy foods and discontinued alcohol for several weeks and it was still there. It was so bad that she wondered if there was something seriously wrong with her. One day out of the blue, she mentioned that it was getting a little better. That same night for dinner, we ate cauliflower mashed potatoes that had cheese in them. It set her stomach completely on fire. So we started wondering if dairy was the issue. She steered clear of cheese for 5 days and it went completely away.
One of the girls stopped by with a wrap. She asked Deb if she wanted the rest. It had a little bit of shredded cheese on it, but Deb didn’t think that would be an issue. It set her stomach on fire again. So, since she has given up cheese, she hasn’t had acid reflux at all. It is amazing what certain foods to do certain people. And have you noticed the older you get, the worse that stuff gets. ????????♀️
Gluten free things have come so far. I remember when they first came out, they were terrible. And, I really don’t have to tell you how to make a pizza when you already have a crust because, of course, it’s a matter of layering whatever you want. But, I wanted to pass the word about the best gluten free pizza crust we have found. Schar’s brand is so delicious. After you load all of your goodies on top, and after it’s baked, it remains crunchy and has a great flavor. Basically add it to your cart now. It’s sooooo good. Our go-to bread is from Schar, too.
Of course, we only added a little cheese on my half, but it is such a great alternative if you are craving pizza and have to stay away from gluten.

There are some great dairy free cheeses these days. They are usually in the health food section of the grocery store. I’ve cut out all dairy lately & feel great. A good documentary on Netflix is called “The Game Changers” It’s worth watching! Can’t wait to try this pizza crust!
Yes... we are still looking for the perfect one. I could switch as long as it doesn't have a coconut flavor, etc.
I've seen these at my local Meijer, but was too afraid to try it. I've been gluten free now for about a year...mine is due to migrane headaches. I still get them, but not as often. When I do cheat and have gluten, I pay for it for a couple of days with a doozey of a migrane. One of the things I miss is a good pizza! All the ones I have tried have been awful. Holding out hope for this one :-) Thank you!!

Have you ever have her google "fod map" can add that app on the phone too. it will list all the food with ratings good or bad for eating for those who have acid reflux. There are ways for a change in her diet. She can have a small amount of shredded parmesan, not any other cheese, they all have dairy in them. Even small amount of tomato depend on individuals. But I suggest finding this app or website "Fod Map" for people with acid reflux.
