Chicken Apple Pecan Salad – Wendy’s Dupe

I love a good salad and share this one all of the time over on our Instagram stories.  It’s so easy and one of our go-to favorites.  If you have never gotten the Chicken Apple Pecan Salad at Wendy’s, then you will LOVE this recipe.  And, if you have, then you already know you LOVE it… and I will show you how you can easily make it at home.  I always think that I shouldn’t share such simple recipes because they are self explanatory, BUT if you are anything like me, you need to refer back to things sometimes.

Chicken Apple Pecan Salad – Wendy’s Dupe

Every time we go through Wendy’s drive thru, I get their Chicken Apple Pecan Salad.  It is absolutely delicious.  They are pretty pricey as all salads are.  One day, we both said, “We can make this at home for so much less….”   The convenience of the drive-thru is still nice, but if you find yourself wanting to stay home, here is how to make it.

 

 

None of the ingredients are measured, and you can add however much of each you want.

Ingredients:

Romaine Lettuce

Cooked Chicken

Diced Apples

Candied Pecans

Blue Cheese

Low Sugar Dried Cranberries

Raspberry Vinaigrette – We have used several different brands

 

You can make this as healthy as you want by limiting the candied pecans and blue cheese, but both of those ingredients are the best part.  ????  If you aren’t a blue cheese person, I think cheddar would also be good.

How we…. aka Deb cooks the chicken… ????

If she can’t be outside to cook the chicken on the barbecue, her next choice is to use the food ninja on the air crisp setting.  Either way she cooks the chicken, she sprays it with a little olive oil and adds lots of salt and pepper.  The food ninja makes the chicken so tender and SO GOOD.  We can usually cut it with a fork.  She usually cooks it in the Food Ninja for around 15-20 minutes depending on the size.

I have had so many people ask which Food Ninja we have.  We have the 5quart which is perfect for two people.  If you have a larger family, you will definitely want to go larger.

  • I am not a blue cheese person but I use goat cheese either the honey one or the original flavored goat cheese. I do love the chicken Apple Pecan salad and rather have raspberry hazelnut vinaigrette which is my favorite dressing.

  • I need more info on the chicken. Do you use boneless, skinless breasts, other cuts....store brand, organic, Tyson's, Purdue? Cook them whole,, and cut up after they are cooked, or cook pre-cut pieces? My boyfriend has a Ninja. What setting...air fry, bake, other, and what temperature do you cook the chicken at? We've found the actual recipes from Ninja work better for us if we reduce the temperature and cut the time almost in half. Otherwise, everything seems to come out dry and overcooked.

    Another good one , if you haven't tried it, is the Fuji apple, chicken salad from Panera. (I have them leave off the onions)
