Gluten Free Energy Bars

I don’t know about you, but I love having things like these gluten free energy bars prepared and ready to devour when I get the last minute hunger pains.  Otherwise I will reach for things that I shouldn’t be eating.  These are great to eat as a dessert and as a snack between our meals. They are gluten free and filled with only natural ingredients.  Both Deb and I love them and can’t stay out of them. Also, we have been making these energy bars for years so I don’t remember where we originally found the recipe. So here is the recipe for you to try out.

Gluten Free Energy Bars

I actually made these for the car ride to the concert that we attended a few nights ago. We went to see Lionel Richie and Earth, Wind & Fire.  Have you seen them?  It takes four hours from our house to get to the venue in Louisville, KY.   I’m sure you are the same, but sweet snacks for a four hour car ride is a must.  We used to stop and get coffee and candy to make the drive more pleasurable. But, over the last few years, we try to be more prepared and actually take things that are healthier.  These gluten free energy bars are healthy, sweet, and absolutely delicious.  They are on regular rotation at our house any time we are wanting something sweet.  I also make these 4-ingredient peanut butter cookies when we feel that way. Both of these are such treats to us.

I am sure this recipe can be modified if you want to switch the types of nuts in it, so you can experiment with that. We both happen to love cashews and almonds so this is perfect for us. They are gooey and filling and a healthier sweet treat.

Gluten Free Energy Bars

These energy bars make a delicious sweet treat that is all natural that everyone will enjoy.
Course Dessert, Snack
Prep Time 10 minutes

Ingredients

  • 3/4 cup almonds
  • 1/4 cup cashews
  • 1 1/4 cup pitted dates
  • 1/4 cup unsweetened shredded coconut
  • 1 tbsp coconut oil

Instructions

  • Add almonds and cashews to a food processor or high powered blender and blend until course. Don't blend too much or you will make nut butter.
  • Add dates to the nut mixture and blend until they are chopped up. And, then add the remaining ingredients until everything is blended. You may need to scrape down the sides and blend again.
  • Press into an 8x8 pan and place in refrigerator until firm.

A Few Additional Notes:

  • I have never tried rolling these into balls but you could totally do that.
  • If your mixture seems a bit dry, add a bit of water or a few more dates
  • If it seems too wet, add a few more nuts.
  • If your dates are on the dry side, soak them in hot water for about ten minutes before adding to the food processor.
  • I usually use liquid coconut oil, but you could totally use solid coconut oil, but you would probably have to melt it first.
