High Protein Pancake Recipe

I LOVE pancakes.  As a little girl they were always my number once choice for breakfast when we went out.  My sister and I used to make them every chance we got when we were younger, too.  We would add a layer of peanut butter between two pancakes and then douse them with syrup.  Also.. our grandma knew how much we loved them so when we were there, she would offer them to us any time of day.  Breakfast, lunch, or dinner, grandma would say, “Do you want pancakes?”  As I got older, I realized that I cannot just eat pancakes for breakfast anymore due to the carbs.  I am STARVING after about an hour of eating them and already want a snack, which is a no bueno.  A few weeks ago, I came across a TikTok of someone sharing a high protein pancake recipe.  We decided to try it.  And, I’m so glad we did. 

 

High Protein Pancake Recipe

This high protein pancake recipe contains cottage cheese. But you will never notice it.  I have been on the cottage cheese side of TikTok for quite some time and I am not really mad about it.  I have found some really good recipes which are higher protein.  The recipe section of our website has several. Let’s get on to the recipe.

This recipe makes about 5 larger pancakes.  It’s perfect for Deb and I as we normally split the fifth one.  Or whoever is still hungry eats it.  So I would say this recipe is good for healthy portions for two.

 

 

Ingredients:

4 Eggs

1  1/2 Cup Cottage Cheese

3T Maple Syrup

1 Teaspoon Vanilla

3/4 Cup Flour – We obviously use Gluten Free – This kind here.

1/2T Baking Powder

1/4 Teaspoon Salt

 

Blend the cottage cheese in a food processor or blender.  I usually blend it for a LONG time.. like maybe 2 minutes.  This is your base for all different types of recipes.  Add some monk fruit sweetener with some berries and it almost tastes like cheesecake.  Anyway, it gets really smooth and creamy.

In a bowl, add the eggs, blended cottage cheese, maple syrup, and vanilla.  Stir that together and then add the dry ingredients.  Mix well.  And that is your high protein pancake batter.

 

Of course, we use cooking spray to cook ours, but in the olden days, we used straight butter and got the edges really crispy.  Also, like I said above, we would add peanut butter.  But, we have to save calories here and there these days.  I usually use a Keto or sugar free syrup now, but obviously add the toppings that you want.  Neither of us can taste a difference between these pancakes and the ones from our childhood.

And… these high protein pancakes do not give me that crash that I used to get with the old ones either.  They take me all the way to lunch without a snack.
