High Protein Pudding Dessert

I love desserts and really anything sweet. However, after menopause, desserts don’t like me much.  I really try to stay away from anything that has a lot of carbs. Some days though, I just want what I want. When I am in one of “those” moods, it’s best for me to give into my sweet tooth. I always try to come up with something that has a bunch of protein to counteract the carbs. And, this high protein pudding dessert does just that.

High Protein Pudding Dessert

You can really add a lot of protein in your diet with this high protein pudding dessert.  Also, we used bananas in this but you could use really any fruit. Any type of berries would be excellent.

High Protein Pudding Dessert

This pudding dessert can be a guilt-free breakfast.
Course Breakfast, Dessert, Main Course
Prep Time 5 minutes
Servings 2

Ingredients

  • 1 cup Yogurt - We love Fage Yogurt
  • 1 scoop Vanilla Protein Powder - We used Flavcity
  • 1 tsp Vanilla extract
  • 1 banana or fruit of your choice
  • Graham crackers - We used Simple Mills

Instructions

  • In a bowl, mix together the yogurt, protein powder, and vanilla. Set aside.
  • Chop your banana in pieces and add to the yogurt mixture.
  • Crush your graham crackers. We used a handful of the simple mills since they are gluten free. These really set this dessert over the top.
  • In a bowl or glass, add a layer of the graham crackers, and then a layer of the pudding mixture, and top it with a layer of bananas or fruit of your choice. Keep layering until everything is gone.

Notes

You CAN put it in the fridge to marinate the flavors for a few hours, but we normally eat it right away. It is SO DELICIOUS.

 

Again, any type of fruit would work. If you don’t have fruit, you could use fresh jam or jelly. The possibilities are endless. Let me know if you try this one.
