Mock Barbecue Beef Sandwich Recipe

Do you like how I made the feature picture black and white so you wouldn’t see the bright orange carrots and say, “Um…….I don’t think so.”

Yes…you read the description and first sentence correctly.  It’s a mock barbecue beef sandwich recipe using roasted carrots.  If you want something low in calories that is delicious, keep reading.

Remember when I told you I was going to share a recipe that’s really not a recipe but is a healthy sandwich that is low in calories and very weight watcher friendly?  Well, this is it.  I briefly mentioned it, in another post, a few months back and had people ask me what I was talking about so I figured, I would start my RECIPE collection with a dandy.  ????

 

 

Quick and Easy

It’s something you can make really quick when you have nothing else in your frig except a bundle of carrots.   Or is that just us?  ????

As you all know, I’m vegetarian and Deb is semi-veg.  She eats MOSTLY vegetarian but she has her carnivorous moments.  She started the grill a few days ago and said, “What do you want?  I’ve got two pieces of chicken, a hot dog, and a piece of fish for myself.”  ????

 

She was low on meat that day, obvs.

 

So basically this probably really isn’t a “recipe”, but I had to tell you about it because it’s delish.

Mock Barbecue Beef Sandwich Recipe

(If we can call it a recipe.)

 

Ingredients:

4-5 Large Carrots

1-2 Onions

1-2 tsp Olive Oil

Salt/Pepper to taste

Barbecue Sauce (Your favorite brand)

Buns (Your favorite brand)

 

 

Preheat oven to 350.

Peel and grate carrots and onions and toss all with olive oil, salt, and pepper.  Roast on a baking sheet for 12 minutes.  Add barbecue sauce to taste and serve on your favorite bun.  This amount makes several sandwiches, so therefore, I usually mix the barbecue sauce for each individual sandwich and then store the remainder in the refrigerator without.

See…NOT even a recipe.  But seriously.  Deb even tells people about it because she loves it, too.

The sweetness of the roasted carrots and onions mixed with the tangy and spicy barbecue sauce is DELISH.  And, it’s hard to find a warm “sandwich” option that sometimes us veggie people crave.

 

I’m actually thinking about trying this with one of the million zucchinis that people are throwing at us.  But, I would probably have to sweat the moisture out of them first or they would be too wet for sandwiches.  And maybe not roast them as long.  I will keep you posted on that.

Let’s Break it Down.

If you are following weight watchers, the only things that would count, points wise, are the olive oil and your barbecue sauce.  And, of course, your buns.  I eat the Healthy Life Whole Wheat buns and they are only 2 points.  For those of you who don’t follow WW, but still watch calories, they are 80 calories per bun which is about half the amount of “regular” buns.  And they are pretty tasty.

 

And if you are one of those lucky ones who can merrily eat whatever bread you want, then the world is yours.

 

Side Servings

Obviously, a big salad on the side would be very weight watchers friendly, but these barbecue carrot sandwiches are delicious served with baked sweet potato fries.   If you prefer regular baked fries, they are still pretty low in weight watchers points and calories.

So there you have it.  A quick, simple, delicious vegetarian meal that is low in calories and low in points.
