Refreshing Summer Salad with Lemon Dressing

I kinda sorta made up this salad a few days back and it was SO GOOD that I made it again the next day.  I say “kinda sorta” because I stole the dressing idea from another salad.  And, I added my own ingredients.  Like literally…. it was one of those meals that I sat and said, “Oh my gosh… so good… so so so good” after every bite.  It’s light and summery and pretty healthy.  And, the lemon dressing is probably my favorite part.  It’s very refreshing.  Deb has even commented so many times how good it was.

I would never think that green onions, apples, and parmesan cheese would be delicious together but it is.  The green onions give it an extra over the top taste.  You could probably use chives if you aren’t a huge green onion fan.  That would give it a little bit more flavor.  And, you could swap out the apple for a pear, or chicken for the tuna.  Basically there could be so many versions of this salad with this dressing that you couldn’t go wrong.

 

 

 

Refreshing Summer Salad with Lemon Dressing

 

Ingredients:

Per usual, I won’t give you amounts on the salad part because it’s all thrown together.  And, you can make it according to your own desires.  If you want to add more walnuts and less apple, that’s up to your discretion.  The dressing is what puts it WAY OVER THE TOP!  ????

 

Romain lettuce

Walnuts

Apple

Green Onions

Parmesan Cheese

Tuna or Chicken

Lemon Dressing

Add all together and whisk.  Obviously, the lemon juice could be different with the size of lemons so just count on 1 part lemon juice to two parts olive oil.

 

Juice of one lemon

2 Tablespoons of Olive Oil

Salt and Pepper

 

EAT!

Like I said.. I’ve made it two days in a row because it was so light and refreshing.  I have posted our favorite shrimp salad recipe if you want another idea.  Oh… and the Wendy’s dupe chicken salad, too.  Don’t forget about that one.  Summer usually brings more salads to our house.  Let me know if you try it.
