Blue Cheese Stuffed Buffalo Chicken Meatballs

We decided we were going to get festive for the upcoming Super Bowl event over on social media.  Here is the funny thing.  We make it an event in our house, but we go nowhere and don’t have anyone over. Ha!  We love watching the commercials and half-time entertainment while scrolling social media.  I do love watching the fans get so excited when their team does well.  So in our festivity planning, we wanted to share a few recipes that may be good for your upcoming parties.  The first one is this blue cheese stuffed buffalo chicken meatballs recipe.  To be honest, we had never tried this before until last week.  And, neither of us can stop thinking about them.  This will definitely be made again and again.

We messed it up!

See notes below the recipe.  We messed it up and it was still delicious.  In our error, we saved a lot of calories and didn’t even notice.  So, if you are one who likes to make recipes a bit healthier, do what we did.

Blue Cheese Stuffed Buffalo Chicken Meatballs

These meatballs are so delicious and will definitely be rotated in our meals. Make a bit healthier by seeing my notes below. This makes about 8 meatballs.
Course Appetizer, Main Course
Prep Time 10 minutes
Cook Time 30 minutes
Servings 4

Ingredients

  • 1 lb ground chicken
  • 1/3 c. finely chopped onion
  • 1 large egg beaten
  • 1/4 c plain breacrumbs
  • 1 1/2 tsp chopped garlic
  • 1 oz blue cheese crumbled
  • Salt and Pepper to Taste

For Sauce:

  • 1 cup butter
  • 3/4 c buffalo style hot sauce

For Blue Cheese Dip

  • 1/2 c sour cream
  • 4 oz blue cheese crumbled
  • 1/4 c buttermilk
  • Salt and Pepper
  • Fresh Chives

Instructions

Step 1

  • Preheat Oven to 400º. Grease a small sheet pan with cooking spray. Combine chicken, onion, egg, breadcrumbs, and garlic in a bowl. Season with salt and pepper

Step 2

  • Use about 1 ounce chicken mixture to form a meatball around 1-2 small pieces of crumbled blue cheese. Transfer to prepared pan. Repeat with remaining chicken mixture and blue cheese. Lightly oil meatballs with cooking spray. Bake, turning once, until cooked through.. around 18-20 minutes.

Step 3

  • Melt butter in a saucepan over low heat. Add hot sauce and whisk to combine. Remove from heat. When meatballs are fully cooked, add to saucepan and toss gently to coat.

Step 4

  • Make the dip... Combine sour cream, crumbled blue cheese, and buttermilk in a bowl. Season with salt and pepper and top with chives. Serve with meatballs.

Like I said above, we messed this up.  Deb printed out the recipe and it didn’t print the entire step 2.  So we forgot the butter, which obviously saves a lot of calories. We added a little bit of buffalo sauce on top of the meatballs before we put them in the oven.  And added a little more when they came out.  We didn’t miss the butter at all.  However… We figure they would get browned a bit more by following the directions.  Deb checked them with a meat thermometer to make sure they were completely done, so we didn’t mind.
