Delicious Vegetarian Chili Recipe with Hominy

You know that Fall is coming.  YAY!  I love Fall but don’t like what follows, but you all know that by now.  Soup is one of our favorite things to cook.  I mean a big pot of soup will last a few meals here which is a plus in our books.  Leftovers.  Ahhhhhh.  My favorite!!!  When I was young, leftovers went right in the garbage.  When I got older, leftovers are lifesavers.

Ok, enough of that.  We are both vegetarians in this household so we always find different ways to make meals without meat.  This particular chili soup has hominy.  Let me guess… you don’t know what hominy is.  I get this blank look from people a lot of times after I mention the word hominy….so you’re not alone.

To be honest, I’m not sure what it is either.  ????  It is a piece of corn… or a corn kernel… or something like that.  Whatever it is, it’s good.  We used to eat it as kids just heated up in a skillet and sometimes covered in cheese, because everything is better covered in cheese.

Delicious Vegetarian Chili Recipe with Hominy

1 Large Onion Diced

1 Clove of Minced Garlic

Olive Oil

One quart of canned diced tomatoes (or one can from the grocery store)

One 14oz can of chile beans

One 14oz can of white hominy (drained)

Chile Powder, Salt, Pepper (all to taste)

 

Directions

In a large saucepan, add olive oil and onions until they are tender.  Add minced garlic and cook for a minute.  Add tomatoes with juice, chili beans, and drained hominy.  Stir and bring to a boil.  Add chili powder, salt and pepper to taste.  Simmer on the stove top for 20 minutes to bring all of the flavors together.  Serve right out of the pan!  It’s delicious.

Add ons:  Cheese, sour cream, and green onions.  Or you can add Fritos chili and cheese chips on top if you are feeling a little daring.   When I’m being healthy, I eat only the chili.  When I don’t give a shit about my floppage around my middle section, I add the goodies.  The little pieces of hominy has great texture and makes you think you are eating clumps of cheese, which is perfect if you are trying to be good.  Because all in all this is a healthy meal.

This is one of our go-to meals when we haven’t been to the grocery, as we always have these items on hand.  This heats up well after freezing.   Let me know if you try it and what you think.  I think it is delicious!

  • Really good and very easy. I was looking for a way to use hominy because I had part of a 28oz can leftover from a tortilla soup recipe. Tomatoes and beans were in my pantry, so this came together in no time at all. Great rainy day lunch!
