Our Favorite Salmon and Brown Rice Recipe

We have our favorite recipes that we rotate in and out all of the time.  There is the Refreshing Summer Salad with Lemon Dressing that is literally our go-to salad.  ????  We have this delicious salad probably twice a week.  Number one because it’s so good.  AND, number two because we normally have everything we need on hand.  It is SO YUMMY!  We also rotate the Grilled Shrimp Salad with Air-Fried Shrimp and the Chicken Apple Pecan – Wendy’s Dupe Salad on a regular basis.

It has come to our attention that the salmon we have been buying on the regular is so FREAKING delicious that we have been rotating it in and out weekly, too.  I’ve always loved salmon.  But the salmon we have been buying is so good and doesn’t taste really fishy.  It is so tender and have I mentioned delicious.  We started making this salmon and brown rice dish and it has quickly become our absolute favorite.  We ran out of salmon a few weeks ago and when it got delivered this week, we made this recipe the very same day.

I thought you guys would love it so I wanted to share.  It literally takes about ten minutes!  Here is our favorite salmon recipe.

 

Our Favorite Salmon and Brown Rice Recipe

 

These amounts serve 2.

 

Ingredients:

2 pcs – Salmon (thawed)

1 cup – Brown Rice

10 cherry tomatoes halved

1/4 cup Balsamic Vinegar

2 tsps Brown Sugar (We use the stevia type)

Garlic to taste

Olive Oil

Basil

Salt and Pepper

 

Directions:

Pat dry the thawed salmon with paper towels and sprinkle with salt and pepper.  We cook our salmon several ways.  One way we have found that is absolutely delicious is in the air fryer.  You need no oil.  Just turn it on 400 degrees and cook it for 8 minutes.  Check to make sure it’s done because the time obviously depends on the size.  We, also add a little olive oil to a skillet and fry it around 4 minutes on each side.  The salmon is delicious both ways.

 

Start cooking the rice while the salmon is cooking.  We use brown Minute Rice. You can use whatever amount you want.  We usually make 1 cup of rice to 1 cup of water.

 

 

 

Remove the salmon from the skillet and set aside.  Using the same skillet, add a bit of olive oil and garlic.  We don’t like our recipes overwhelmed with the taste of garlic so we maybe use 1/2 clove.  Add the halved cherry tomatoes, basil, balsamic vinegar, and brown sugar.  All you have to do is basically heat that up so it takes about 30 seconds.

 

Plate and Eat

We add the rice to our plates, the salmon on top of the rice, and then drizzle the tomato and balsamic concoction on top.  We add a bit more fresh basil and a salt and pepper to taste.

 

Literally… just me typing this recipe has me hungry for this dish again and we just made it a few days ago.  ????  Let me know if you try it!
