We LOVE trying new recipes.  And we tend to gravitate towards simple and quick meals that are also pretty healthy.  Did you try the chili recipe that I shared yet?  I cannot get it off of my mind.  ????  It is SO DELICIOUS.  I do have a recipes tab up top if you are looking for any quick great meals.  There aren’t tons but when we find a great recipe, I always add them to that page.

We recently made this spicy chicken wrap and it was excellent.  The original recipe called for shrimp on a hoagie roll but of course, we made it a little healthier.  By using a gluten free wrap for me, it reduced the calories a lot.  AND…by using the pre-packaged rotisserie chicken from the deli section at Walmart, it was quick and simple… filling all of the requirements in our meal making.

You can, of course, substitute shrimp for the chicken.. .and a hoagie roll for the wrap, but truly there is no need.  Our way was so delicious and took less than 15 minutes to make.  Deb said the hardest part was getting the spices out of the spice cabinet. ????  Here is the spicy chicken wrap recipe.  (Serves 6-ish)

 

 

Spicy Chicken Wrap

  • 1 package of the prepackaged rotisserie chicken or roughly 3-4 cups of cooked chopped chicken
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 cup mayo – we used the avocado mayo
  • 1 T lime juice
  • 1/2 T of chipotle sauce
  • Salt and Pepper to taste

 

Mix all of the above ingredients together.  You can heat it up or eat it cold. We ate it cold on a warmed wrap.

  • Serve it on a wrap or hoagie roll whichever you prefer
  • Top the chicken with lettuce if preferred

 

We eat ours with coleslaw or some type of chips.  But you could serve it with anything.  If you make it, please let me know what you think. 

 

This recipe serves roughly 6 people. 

So, we have leftovers, which are my favorite.
